Paneer Kofta

Introduction

Paneer kofta is a popular Indian dish made with paneer (cottage cheese), potatoes, and spices. The koftas are deep-fried and then simmered in a creamy gravy. Paneer kofta is a delicious and versatile dish that can be served as a main course or as an appetizer.

Ingredients

  • 1 pound paneer, crumbled
  • 1 large potato, boiled and mashed
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon salt
  • 1/4 cup oil, for frying
  • For the gravy:
  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • Salt to taste

Cooking time

  • Koftas: 10 minutes
  • Gravy: 20 minutes
  • Total: 30 minutes

Steps

  1. In a large bowl, combine the paneer, potatoes, flour, cornstarch, garam masala, turmeric powder, red chili powder, and salt. Mix well.
  2. Shape the mixture into small balls, about 1 inch in diameter.
  3. Heat the oil in a large skillet over medium heat. Fry the koftas in batches until golden brown, about 5 minutes per batch.
  4. Remove the koftas from the skillet and set aside.
  5. To make the gravy, heat the oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  6. Add the garlic and ginger and cook for 1 minute more.
  7. Add the turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala. Cook for 1 minute more.
  8. Add the tomatoes and their juices. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the gravy has thickened.
  9. Stir in the heavy cream and salt to taste.
  10. Add the koftas to the gravy and simmer for 5 minutes, or until heated through.
  11. Serve hot with naan, rice, or roti.

Important tips

  • For a crispy kofta, make sure the oil is hot before frying.
  • To prevent the koftas from sticking together, roll them in a little bit of flour before frying.
  • If you want to make a healthier version of paneer kofta, you can bake or air fry the koftas instead of frying them.
