ingredients:
Fresh paneer, cubed and onion, finely chopped
Vegetable Oil
Cloves of garlic, minced
Ginger, grated
Tomatoes, finely chopped
Cumin seeds
Turmeric powder
Ground coriander
Red chili powder (adjust to your spice preference)
Salt to taste
Cup of Curd
Cups of water
For Garnish:
Fresh cilantro, chopped
Instructions:
For Paste
- 1 ½ tbsp Oil (तेल)
- 3-4 Green chillies (हरी मिर्च)
- 1 inch Ginger, slice (अदरक)
- 2-4 Garlic cloves, roughly chopped (लहसुन)
- ⅓ cup Coriander leaves (धनिया पत्ता)
- 1 tbsp Oil (तेल)
- 3 medium White onion, sliced (सफेद प्याज)
- Salt to taste (नमक स्वादअनुसार)
- ¼ cup Coriander leaves (धनिया पत्ता)
- 3 tbsp Curd, beaten (दही)
For Curd Mixture
Prepared Paste (तैयार
किया हुआ पेस्ट)
- ½ cup Curd, beaten (दही)
- 1 tbsp Coriander powder (धनिया पाउडर)
- ½ tsp Turmeric powder (हल्दी पाउडर)
- ½ tsp Garam masala (गरम मसाला)
- A pinch of cumin powder (जीरा पाउडर)
For Paneer
Marination
- 400 gms Paneer into cubes (पनीर)
- 1 tbsp Oil, (तेल)
- ½ tsp Black peppercorns, crushed (कुटी हुई काली मिर्च)
- A pinch of asafoetida (हींग)
- ½ tsp Ginger Garlic paste (optional) (अदरक लहसुन का पेस्ट)
- ½ tbsp Tender coriander stem, finely chopped (धनिया के डंठल)
For Paneer Afghani
- 1 tbsp Oil (तेल)
- 1 tbsp Ghee (घी)
- 2 Bay leaf (तेज पत्ता)
- ½ inch Cinnamon stick (दालचीनी)
- Prepared Curd Mixture (तैयार किया हुआ दही का मिश्रण)
- ¼ cup Water (पानी)
For Sauteing Paneer
- 1 tsp Oil (तेल)
- Marinated Paneer (मैरिनेटेड पनीर)
For Garnish
- Prepared Gravy (तैयार की हुई ग्रेवी)
- A pinch of dry fenugreek leaves, crushed (कसूरी मेथी)
- Seared Paneer, sliced (तला हुआ पनीर)
- Green Coriander Leaf (धनिया पत्ता)
For Sauteing Paneer
- In a pan, add oil, once it’s hot, add marinated paneer and sear it until golden brown in color (एक पैन में तेल डालें, गर्म होने पर इसमें मैरीनेट किया हुआ पनीर डालें और इसे सुनहरा भूरा होने तक भून ले).
- Keep it aside for further use (इसे आगे उपयोग के लिए अलग रख दें).
For Paste
- In a pan, add oil, once it’s hot, add
green chillies, ginger, garlic cloves, coriander leaves and sauté well.
Transfer it to a bowl and keep aside (एक पैन में तेल डालें, जब तेल गर्म हो जाए तो इसमें हरी मिर्च, अदरक, लहसुन की कलियां, हरा धनिया डालें और अच्छी तरह से भून लें. इसे एक कटोरे में निकाल लें और एक तरफ रख दें).
- In the same pan add oil, once it’s hot,
add white onions, salt to taste, coriander leaves and sauté until onions
are translucent. Transfer it to the same bowl (उसी पैन में तेल डालें, गर्म होने पर इसमें सफेद प्याज, स्वादानुसार नमक, हरा धनिया डालें और प्याज के पारदर्शी होने तक भूनें। इसे उसी कटोरे में निकाल लें).
- Add curd, transfer it to a grinder jar
and make a smooth paste (दही डालें, ग्राइंडर जार में डालें और चिकना पेस्ट बना लें).
- Keep it aside for further use (इसे आगे उपयोग के लिए अलग रख दें).
For Curd Mixture
- Combine the prepared paste, curd, coriander powder, turmeric powder, garam masala, and a little amount of cumin powder in a bowl. Thoroughly blend the ingredients together. (एक बाउल में तैयार पेस्ट, दही, धनिया पाउडर, हल्दी पाउडर, गरम मसाला, चुटकी भर जीरा पाउडर डालकर अच्छी तरह मिला लें).
- Keep it aside for further use (इसे आगे उपयोग के लिए अलग रख दें).
For Paneer
Marination
- Combine paneer, oil, crushed black peppercorns, a little amount of asafoetida, ginger garlic paste, salt to preference, and tender coriander stem in a bowl. Thoroughly mix the ingredients to ensure proper marination. (एक कटोरे में पनीर, तेल, कुटी हुई काली मिर्च, एक चुटकी हींग, अदरक लहसुन का पेस्ट, स्वादानुसार नमक, नरम धनिया डालें और इसे अच्छी तरह से मैरीनेट करें).
- Keep it aside for further use.
For Paneer Afghani
- In a handi, add oil, ghee, once
it’s hot, add bay leaf, cinnamon stick and let it splutter well (एक हांडी में तेल, घी डालें, गर्म होने पर तेज पत्ता, दालचीनी डालें और अच्छी तरह फूटने दें).
- Add prepared curd mixture and sauté it
well for a while (इसमें तैयार दही का मिश्रण डालें और कुछ देर तक अच्छे से भून लें).
- Water should be added as necessary and the mixture should be cooked until the appropriate consistency is achieved. (आवश्यकतानुसार पानी डालें और वांछित गाढ़ापन आने तक पकाएं).
- Transfer the prepared dish to a suitable serving vessel, incorporating a small quantity of desiccated fenugreek leaves. Proceed to position the grilled paneer within the dish, concluding the presentation by adorning it with a sprig of coriander.
